A new school year is beginning and now that I will be a Junior Girl Scout leader I have been working on badge activities for my troop. I haven't done this before but am excited to help these girls receive their badges. I gathered together some pages out of a children's cook book from 1975 and some easy recipes that don't have a large number of ingredients so as to be easier to prepare. The girls need to do breakfast, lunch and dinner so I tried to get something together for each. I'm not sure baked beans is something a lot of kids will love for lunch but it was an easy recipe from the children's book and so I included it. Below you can download each file with different pages to print for recipes and some simple instructions for preparation to cooking as well. I recently tried a new pattern I found on another blog; Little Monkeys Crochet; and I love how it turned out. I did end up with it being a little bit larger than hers but I was using a little thicker of a yarn so that is probably why. Wearing it is a little tricky and she includes a youtube video to show how to put it on. After learning how to put it on I love how it wears. I can't wait to try more of her patterns. I have it listed on my etsy page and I plan on making more in different colors. I have been fighting to make more time for crochet because it is so relaxing. This cowl works up pretty quick and I used wood buttons because I had a creamy color instead of a gray; it looks pretty good with the wood buttons I think. You should use your judgement for buttons based on the color you use for the cowl. I like antique metal buttons too. Enjoy!! My family loves to do day trips. We don't have a lot of free time to go away usually so travelling a few hours to someplace exciting in our home state of New York is a great way to spend time together and see new things. On this particular trip, my husband and I decided to go without the kiddos. We visited Letchworth State Park to hike and site see. Letchworth has loads of great trails for hiking, great camping opportunities as well as waterfalls, overnight accommodations and even a museum and fancy restaurant on the grounds. I would however plan an overnight trip if you wanted to walk the whole park...it's HUGE. We did not get to tour the Dam the day we went. Having a late start and not realizing the one and only tour was at 2:00 pm we went for a short hike before discovering a poster at the restrooms advertising the tour. We hiked I would say about 1/3 down the trails from the end that has the three large waterfalls and back, that took pretty much the entire day and I was exhausted. We drove to the other end to see the dam but didn't go inside. Letchworth is known as the Grand Canyon of the East and is absolutely beautiful to behold. We didn't have a selfie stick so our pictures were mostly of my hubby holding my camera out in front of us but we got some pretty good shots. I wouldn't suggest this hike for people with young children. Many of the trails are rough and have some washed out stairs. The stairs were built quite a long time ago and would be difficult for small legs to maneuver. You will want to bring bottled water as well, and if you need it your inhaler. I have asthma and needed it at one point being that there are LOTS of stairs. I love hiking but I do unfortunately have limits. Even with all this I would recommend this trip to anyone. We skipped the restaurant...way too fancy but we did go into the museum right across from it. Actually included in the pictures is a Mastodon skull; pretty amazing to see. There are also lots of native american artifacts and photos to see. You can visit the NY State parks page for Letchworth park to get more details. I know all my fellow gardeners out there who have a few Zucchini plants are having an abundance of these veggies happening. At least every time I plant these I get so many of them that I have to give them to everyone and still have a bunch to use myself. Here is one of my favorite recipes (if you want to call it that) for these delicious summer squash. I like to slice mine thinly in circles but you could easily use a vegetable peeler to make long noodle like slices if you prefer that. I don't use sauce when I make it, my husband is more sensitive to sauce so I use diced tomatoes. If you like to get the kind with hot peppers in them you can do that as well. I get whatever diced tomatoes I can find on sale and chop up peppers and onions (sometimes green onions) to add to them, no real measurement, totally to your taste. If you like more onions you can do that, also could add garlic if you like that too. This recipe is extremely versatile, you can pretty much add whatever you like. So as you can see I use pretty much what I have on hand. I like provolone cheese, taco style and mozzarella cheese. You can add parmesan cheese too if you like that. I usually do 3-4 layers, depending on how much zucchini I have to use.
I bake it at 350 degrees until the cheese is super melty, I like to brown the cheese some too. I cover it with foil for the first half hour or so and bake it longer without the foil to brown the top. You want it to bake until the zucchini and any fresh veggies you add are somewhat soft like noodles get. So I usually bake it for approximately and hour. Unless I forget to grab it then sometimes even a little longer.....Still is delicious lol. You can make this with a zucchini that is a little less firm if you want to use up one that's been in the fridge a bit. It will just soften up a little quicker in the oven but still has a good flavor, the tomatoes, peppers, onions and cheese pretty much make up most of the flavor anyway. I like this dish because when I have a zucchini that's been hanging around a while I can whip this up with items I already have on hand. It tastes amazing as well and basically the only fat is in the cheese. Oh and if you can/stew tomatoes yourself, those work wonderfully instead of buying diced tomatoes. I like to use my moms stewed tomatoes in this, I don't need to add any peppers and onions when I do because they are already in the stewed tomatoes. Less ingredients....even easier. I hope you will enjoy this dish as much as we do at my house. I haven't tried it as a freezer dish yet, I plan on trying that tonight. I would put it together in a tin, cover it with foil and freeze it before cooking it. I think it would work better, it may be a little more liquidy when you cook it is all. That doesn't hurt the flavor tho. You may need to wrap it in a big freezer bag, after covering it with foil for when you freeze it to prevent freezer burn. A few months ago I began a new workout that has helped me get into better shape. Although I am not athletic and I don't have alot of time to spare this has fit into my schedule perfectly and I have been able to modify moves where I need to when I can't get my body to cooperate with the routine. I find it to be challenging without being completely impossible. I completed the first 8 weeks and have began the routine again and I haven't gotten bored with it yet. I'm not in perfect shape and have some chronic pain that I deal with so the moves continue to be challenging. I do occasionally replace a cardio workout with Zumba when I'm a particularly painful morning but most of the time I do the original workout. This is the workout, yes it is a Beachbody workout so it's not the cheapest but totally worth it if you don't have alot of time to spare. My coach Holly is the one who suggested it. I've known her for quite a while and she is a great coach.

As I said I'm not a trainer or athletic person by any means but I do enjoy this workout. I have seen results and if I actually followed the diet plan to the T then I'm sure my results would have been amazing. There are lots of other exercise programs that Beachbody offers as well that are also great, and you can see them on her webpage as well. There's even a phone app if you want to have your coach hold you accountable. |
